Paneer Color Color Scheme

Paneer is cottage cheese used extensively in the dishes of the Indian subcontinent. It is prepared by coagulating the milk proteins using an acidic agent, typically, lime or lemon juice. Some even use vinegar or citric acid. The coagulated milk is then rinsed while being passed through a sieve – general muslin cloth – and left to drain out. Paneer is an integral source of protein for vegetarians.
